‘Eat well to live well’ - I believe that people are becoming more conscious of what they put on their plate.
The trend going worldwide is the ever-growing presence of spices, as described by several US publications. More and more new ingredients will shine, including new chillies, especially the Peruvian AJI AMARILLO.
I strongly believe that the trend of 2014 will be to have smaller venues based around a high quality, stylized mono-produit and supported with a proactive use of social marketing.

The BBQ theme will continue and diversify. I think there will be more and more influences from the US, including more in-depth southern regional cooking.
