Regional British Menus become Purple Grape's signature dishes for 2013
Purple Grape have been working on their new menus for the 2013 spring and summer season and bang on trend, they have created some key British dishes for their new menu portfolio. Over the past year or so, we have all seen the reinvention of British classics but 2013 will see a modern gastro fine dining approach in service style.
Purple Grape’s Director, Emily Gillan, goes on to say that “as we researched what was happening in the restaurant scene it was great to see a continued demand for seasonal ingredients and a swing towards regional and historical dishes. We also couldn’t fail to notice the resurgence of the previously unloved chicken popping up all over the London scene with restaurants such as Mark Hixs’ Tramshed - so it is a joy to have a chicken dish on our signature spring dishes”.
The Purple Grape team, therefore have been creating their own interpretation of these up-and-coming trends and the signature dishes on the menus are a true celebration of British produce, championing key regional ingredients. At all times, the chefs have taken into account the complexities of London’s unique venues and so dishes can easily be developed even in some of the trickiest locations. Here are just a few ideas from the main course menu:
Larverbread and Penclawdd cockle galette with rarebit glazed leek, accompanied by a fennel and apple slaw and chipotle sauce
Grilled Lorne sausage on rumbledethumps, pickled red onions, smokey Highland Whisky and forest mushroom sauce
Spring corn-fed chicken poached with baby vegetables in light saffron infused broth, topped with a horseradish crème fraiche. Accompanied by bacon cornbread
Beef olives with kidney gravy served with skirlie and champit tatties, fondant turnips and puréed carrots
